Colombia has a high agroindustrial potential because it produces many fruits and vegetables of excellent sensorial, nutritional and nutraceutical quality. These products are alternatives for the food industry because they are a source of bioactive compounds with different functional properties. However, the recovering of them or their utilization using conventional technologies causes losses due to high temperatures and long time processing. On the other hand, the tree tomato (Solanum betaceum) has important bioactive compounds such as phenolic compounds, carotenoids, vitamins and minerals; which possess beneficial effects to the human health.
The objective of this research is to bio-guide a process of fractionation though untargeted metabolomic for obtaining enriched fractions with bioactive compounds from tree tomato juice. The fractions will be obtained by an ultrafiltration process in a filtration system partially automated (Membralox®, model 1P19-40, Pall-Exekia, Bazet, Francia). This study will evaluate two membranes of different molecular weight cut-off (MWCO) (1 y 5 kDa) and the biologic activity of the obtained fractions in rats by an untargeted metabolomic analysis. The consumption by rats of tree tomato fractions will allow the identification of the principal metabolites and biomarkers of intake with high functional potential.
